JOHNSON CITY, Tenn., Oct. 17 /PRNewswire/ — Ask most restaurant chain executives or the owner of your neighborhood deli what keeps them awake at night and chances are they will tell you their worst nightmare is serving their customers a food-borne illness.

Tainted catfish and pork from China are only a few of the food scares of 2007 that have raised concerns among restaurant operators and their customers. One survey of consumers last month by American Express found that 40 percent of U.S. consumers avoid purchasing food products from certain countries. A recent report on food safety by Technomic, a leading restaurant industry research firm, found 38 percent of American consumers “extremely concerned” about food safety.
