A wildly popular Italian dessert, Tiramisu is traditionally a cake, layered with mascarpone and flavored with coffee, cocoa and liquor. This dish has been adapted into a variety of different recipes, from cakes and trifles, to puddings and more. A versatile dessert, even the flavors are being modified. Recipe: Delicious Gourmet Pistachio Tiramisu


With the traditional flavors of coffee and cream, there are a number of variations on this dessert.

Ingredients:

FILLING:
- 50 g icing sugar
- 500 g mascarpone
- 500 g whipping cream (35%)
- 200 g pistachio purée
- 2 vanilla beans

DECORATION:
- Génoise cake or ladyfingers
- Chocolate, for garnish
- Caramelized pistachios
- Amarena cherries

Directions:

1. Using either a stand mixer or a hand mixer, whip together the mascarpone and whipping cream – start slowly to ensure you don’t splash yourself, and gradually whip faster.
2. Meanwhile, slice open two vanilla beans and remove the seeds.
3. Add the vanilla seeds to the whipping creams.
4. Once everything is whipped, add the icing sugar and gradually start whipping again until stiff peaks are formed.
5. Split the cream mixture in half, and put one half in a piping bag fitted with a large star tip. Place this in the fridge.
6. Leave the remaining half of the cream mixture in your mixing bowl, and add the pistachio purée. Mix until well-combined.
7. Put the pistachio mixture into another piping bag fitted with a large round tip.

DECORATION:
1. In either a shot glass or a martini glass, pipe a layer of the white cream to cover the bottom of the glass.
2. Cover the white cream layer with Genoise cake pieces or ladyfingers.
3. Place one or two Amarena cherries on top of the cake layer (feel free to add some of the syrup from the cherries).
4. Cover the cherries with a layer of the pistachio cream.
5. Add another layer of cherries on top of the pistachio cream.
6. Cover the cherries with a layer of the white cream.
7. Garnish with chocolate pieces and caramelized pistachios.
This is a tasty variation on a popular traditional Italian dessert.
